Many people have long believed that drinking tequila requires taking a shot. Lick some salt, drink the shot, and squeeze some lime. Ta da. We’re done. The reality is quite different, however. First things first – ask for the drinks on the top shelf. That’s right. Forget the stuff that pretends to be tequila and drink the real thing. One hundred per cent agave tequila is where it’s at. And lo and behold – skip the shots. Tequila (and consequently, mezcal) is hard-worked liquor that is meant to be savored through sipping. Leave the shots for spring breakers.
Leave the salt and lime for newbies, too. Aged tequila (the darker stuff) has a mellow flavor which rarely burns the throat and leaves a lovely aftertaste. If you insist on mixing it up, then ask for a lime and suck on it in between sips. Lime is not a chaser. In fact, Mexicans use sangrita as a chaser for tequila and it’s the only acceptable way to go.
